🍄 After a long day hiking through tussock and over ridgelines, there’s nothing better than sitting down to something hot, hearty, and full of flavour. My Mushroom Risotto is one of those meals that feels like real food — rich, creamy, and deeply satisfying — yet it’s incredibly lightweight and simple to prepare.

It’s the perfect comfort meal at the end of a cold or wet hiking day when you want something that tastes like it took effort, but really didn’t.




🍚 The Ingredients


All lightweight, easy to pack, and long-lasting — perfect for multi-day adventures.

• 1 serve Backcountry Cuisine freeze-dried rice

• 1 serve freeze-dried vegetables (like Surprise peas)

• A small handful of dried mushrooms or mushroom jerky

• 1 packet single-serve mushroom soup mix


Optional but highly recommended:

• A sprinkle of Parmesan cheese to serve (dehydrated or packed in a small container)




🔥 How to Make It on the Trail


1. Add all the dry ingredients into your bowl.

2. Pour in enough hot water to cover everything plus some extra to allow for the dried rice, vegetables and mushrooms to absorb.

3. Stir well, making sure the soup powder dissolves and the rice starts to absorb the liquid.

4. Cover and let it soak for at least 20 minutes — this gives the mushrooms time to soften and the rice to get that creamy risotto texture.

5. Once ready, give it another quick stir and top with Parmesan cheese.


That’s it — a rich, mushroomy risotto that feels like a luxury meal in the middle of the backcountry.




🏕 Why I Love It


This one’s a winner for cooler weather trips or when you need a morale boost at the end of a big climb. The mix of the soup base and mushrooms makes it creamy and full of flavour, and the rice fills you up without being heavy.

It’s also an easy one to customise — add extra freeze-dried veg, toss in some freeze-dried chicken for protein, or stir through a little olive oil for extra richness.




💡 Trail Tip


Pre-mix all your dry ingredients into a ziplock bag before you leave home. Write the cooking instructions on the bag with a marker — that way you can just boil water, pour, and soak when you’re ready for dinner.




There’s something about sitting outside a hut, spoon in hand, steam rising from your bowl of Mushroom Risotto, that makes every blister and uphill climb worth it.

Because food on the trail isn’t just about fuel — it’s part of the whole experience.
