My Favourite Trail Comfort Food: Chicken Carbonara

There’s something about eating a creamy, cheesy pasta after a big day hiking that just hits differently. Whether you’ve been climbing ridgelines, wading rivers, or trudging through tussock, a bowl of warm Chicken Carbonara feels like the ultimate reward — simple, satisfying, and full of comfort.
This recipe takes all the flavours of a classic carbonara and turns it into a lightweight, trail-friendly version that’s easy to make in a hut or tent. It’s one of my favourites for longer tramps when I want something hearty but still easy to pack and prepare.
🍲 The Ingredients
Everything in this meal is shelf-stable, lightweight, and quick to cook — perfect for the backcountry.
1 packet Trident Rice Noodles (chicken flavour)
1–2 tablespoons coconut milk powder (for that creamy texture)
1–2 tablespoons carbonara seasoning (I like the Culleys one — it’s rich, smoky, and full of flavour)
A handful of Backcountry freeze-dried chicken pieces
A sprinkle of Parmesan cheese to finish
🔥 How to Make It at Camp or the Hut
Add all dry ingredients (noodles, coconut milk powder, carbonara seasoning, and chicken) into your pot or bowl.
Pour in enough hot water to cover everything well.
Stir to combine and let it soak for 20–30 minutes — the chicken needs a bit of extra time to rehydrate fully.
Once ready, give it another stir, top with Parmesan cheese, and enjoy under the stars or by the hut fire.
💡 Trail Tip
If you want to make camp cooking even easier, pre-mix all your dry ingredients into a ziplock bag at home. Write “Add hot water and soak for 25 minutes” on the bag, and you’ll have a no-fuss dinner ready to go at the end of the day.

This one feels a bit like cheating — it tastes like something you’d order at a café, but all it takes is hot water and patience. The coconut milk powder gives it a rich, creamy base, while the Parmesan adds that salty, cheesy finish that always makes a meal feel complete.
It’s high in energy, protein-packed from the chicken, and exactly what you want when the wind’s howling outside and your legs are ready for rest.
There’s no rule that trail food has to be bland — with a little creativity and a few clever ingredients, you can eat really well out there.
