There’s something deeply satisfying about tucking into a hearty, familiar meal after a long day on the trail — especially when it’s one that feels like home. Spaghetti bolognese might not sound like your typical backcountry fare, but with a few clever tweaks, you can enjoy this comfort classic anywhere from a windswept ridgeline to a cozy hut.


Here’s my version — simple, lightweight, and full of flavour — the perfect trail dinner after a big day’s hike.




🍝 Trail Spaghetti Bolognese


Ingredients


  • 1 pack Backcountry Cuisine freeze-dried mince

  • 1 pack Trident rice noodles (beef flavour)

  • 1–2 tbsp spaghetti bolognese flavour sachet (such as Culley’s or Maggi)

  • 1–2 tbsp packet tomato soup mix

  • Parmesan (optional… but really, it’s not)




🔥 Method


  1. Prep the base:

    In your cook pot or mug, add the freeze-dried mince, rice noodles (crushed slightly to fit), and the flavour sachets.

  2. Add water:

    Pour in boiling water until everything is just covered. Stir well and seal with a lid or cozy.

  3. Let it soak:

    Allow to sit for 20–30 minutes, giving it a stir halfway through. The mince will rehydrate, the noodles will soften, and the flavours will come together beautifully.

  4. Top and enjoy:

    Finish with a generous sprinkle of Parmesan — it adds richness, salt, and a little indulgence to your high-country meal.

Pack all your dry ingredients into a single ziplock bag before your trip. Write the water amount and soak time on the bag with a marker — it saves guesswork when you’re tired and hungry at camp.
